After the approval of the European Commision, the white spreadable Greek cheese ‘’Tsalafouti’’ has been added to the Register of Protected Designations of Origin (PDO). Since the creation of this designation in 1992, many exceptional Greek cheeses have entered the official catalogue.

The history of ‘’Tsalafouti’’ dates back hundreds of years. It has been produced in the southern-central part of the Pindus Mountain since the 17th century, mainly from sheep’s milk. According to the European Commission, ‘’its production reflects the specific climate, flora and agricultural traditions of the region, which assist in the unique taste and excellent quality of the cheese’’.

With its soft texture, it is ideal as a spread on bread or toast and enhances salads with a vibrant, tasty twist. When it comes to meat, whether roasted or grilled, it becomes a popular choice on the table. Some even more experimental minds find ‘’Tsalafouti’’ perfect for indulgent desserts.

The distinctive features of the product include a very short maturation period of no more than 12 days, low acidity and a significantly reduced fat content (around 10%-17% of its total weight).
